The next time you fire up that stick burner, smoke some wild hog chops alongside those ribs and pork shoulders. The taste of wild hog smoked over hardwood like hickory, peach, and apple is amazing.
You can also substitute oak for the hickory and use some type of fruit hardwood. I marinated the chops overnight in Lawry’s Chipotle Molasses marinade and they were amazing when I pulled them off the smoker.
The family and friends enjoyed them and folk who never ate wild hog meat said it was better than the pork they get from the grocery store. I can’t wait to try smoking a wild hog sausage fatty.
I used the chipotle molasses marinade, but you can use any type of marinade because the smoker will impart most of the flavor with the hardwood.
You also don’t have to let the chops sit overnight in the marinade. I’ve marinaded wild boar chops for as little as 2 hours and they were tender and very flavorful.
